I think I posted a recipe here once for a raspberry lime frozen yogurt.
And I can't find either the post or the recipe around my house. I made
the recipe up. It involved eggs, vanilla yogurt, a basket of raspberries
run thru a food mill to remove seeds and the zest from 1 lime (possibly
some lime juice too). I made a custard using the eggs and the yogurt or
maybe milk and added the raspberry puree and lime and maybe half and
half...I think.
But I can't remember what else.
I have found a frozen orange yogurt recipe that is similar in that it
uses eggs and zest...Once my new ice cream machine gets here I will
attempt the orange yogurt recipe and also try to re-create the raspberry
one. I really hope to re-discover the raspberry lime recipe as it was a
very good recipe...a strong taste of raspberry and an after taste of
lime....very refreshing
Well here is the orange frozen yogurt recipe and if anyone has my
raspberry lime one please post it.
2 egg yolks
1/3 cup brown sugar packed
1/2 cup milk (2%)
1 1/4 cups yogurt
1 tbsp orange zest
1/4 cup freshly squeezed orange juice
1/4 cup granola
Wisk together the yolks and the sugar till pale yellow and thickened.
In a medium sauce pan over medium low heat, heat the milk untill it has
bubbles around the edges. Gradually wisk into the egg mixture
Return the entire mixture to the pan and cook over low heat untill it
thickens enough to coat a wooden spoon whil stirring constantly. Strain
into a bowl and refrigerate over night till well chilled.
Stir in the yogurt, orange juice and zest and transfer to ice
maker...proceed following manufacturer's instructions.
