Rack and pannier recommendations?

I liked those because the bag itself actually clipped on to the rack,
as opposed to something that I have to strap on. It also fits very
snug on the rack and wouldn't move around a lot. Are there any other
bags/racks like this as the Trek stuff is pretty expensive? Also,
what kind of side pannier(s) would people recommend to go along with
this?

I like under-seat bags for around town/commuting use, Jandd makes a
number of nice ones in different sizes:

Carradice makes a wide range of classic saddlebags and panniers out of
canvas, really well made, but I wouldn't call them cheap by any measure.
The saddlebags require a saddle with bag loops (or an adapter), and
availability in this country is pretty well limited to on-line mail
order. They make a really nice briefcase pannier that I was really happy
with when I was a year-round cycle commuter (I walk to work now).

Ortlieb makes really sturdy, durable waterproof panniers, under-seat
bags, rack trunks, handlebar bags, and anything else that a cycle
tourist or cycle commuter could possibly want, including a couple of
briefcase style panniers specifically for cycle commuters

Rivendell has offered various canvas and leather panniers, under-seat
bags, rack trunks, and other stuff over the years, their offerings tend
to vary as vendors and materials become available or unavailable. Very
nice stuff, though.

My Axiom bags are same as ortlieb but alot cheaper. Got mine at
http://bspbikes.com/ in the GVRD
Since I got a disc bike though any bag on that side heavily weighted will
practically stop use of the rear brake.
Another problem I have is hitting my foot. the axiom disc rack does not let
me put the bag far enough back.

That is not panniers 🙂 It looks like a handy rack bag but panniers
are more like this: http://www.arkel-od.com/. Well they do more than
panniers but they have some nice stuff.
