I was talking with the manager of my favourite health food store and mentioned that I've been incorporating a lot of foods I'd never tried pre-LC, and how it's made my diet a lot more varied and interesting. We got onto the topic of rice and she said to try quinoa. It's a little less than 3/4 the carbs of long-grain white or brown rice (26g net carbs/quarter cup dry compared to 36g for rice) and has about the same nutrients as brown rice. So I bought a small bag and made my "Cabbage Roll Casserole" with it last night. I didn't notice any difference in the taste and it actually made the recipe a fluffier texture, which I found pleasant.
