Quick Chicken Saute' With Bacon
Serves 2

3/4 pounds boneless skinless chicken breasts
1/8 teaspoons salt
3 slice bacon -- cut into 1/2" pieces
2 green onions -- thinly sliced, with tops
1 1/2 tablespoons white wine
salt and pepper -- to taste
hot rice -- for serving (optional)
Slicing across the grain, cut chicken into 1/2 inch slices and toss with
salt. Brown the bacon in a large frying pan. Remove from pan. Put chicken
in the pan and sear over Medium-High heat, stirring frequently, about 7
minutes. Return the bacon to the pan and cook for 5 minutes. Add the wine
and stir with a wooden spoon to deglaze the bottom of pan. Stir in the
green onions and season to taste with salt and pepper. Serve over rice.

NOTES : Bobbie's Note: Here's a very tasty chicken recipe. A little
chicken broth could be added to make more juice to dampen the rice.
