Had a fabulous dinner at Jack Stack's in Lenexa, KS which
was comprised of meaty beef prime rib (standing rib roast)
ribs, slow hickory smoked. Got home and this afternoon
realized hey, I've got some leftover meaty ribs in the
freezer from when I last made a standing rib roast! So I
took them out, let them thaw. Brushed them with some olive
oil and brushed lightly with a hot hickory BBQ sauce.
Heated them in a hot oven for about 30 minutes. OMG, they
were great!
I tossed the bones in a small stock pot. Added 12 cups of
water, 2 cloves of minced garlic, chopped onion, carrot,
celery, salt & pepper and proceeded to make a stock. I let
this simmer on low heat for about 3 hours and let it cook
down a bit. Tomorrow I think I'll make a beef noodle soup
with the stock. Perhaps if I get up the energy I'll buy some
round steak and make a sort of Pho. Don't know yet. The
possibilities are endless!
