    1 egg
    1/2 cup sugar
    1/2 cup light brown sugar
    1/4 tsp. salt
    1/2 tsp. cinnamon
    1/4 tsp. nutmeg
    1/2 tsp. vanilla
    1 cup flour
    1 cup canned pumpkin
    1/4 tsp. baking powder

    Beat the egg, sugars, and salt until light and fluffy. Add the spices
    and vanilla. Mix well. Add flour and pumpkin. Mix well. Add baking
    powder. Refrigerate the batter for at least 2 hours.

    Drop by tablespoons into deep hot oil (375*) and fry for 3 minutes. When
    the fritters rise to the top, turn them over and continue to cook until
    browned. Remove from oil with slotted spoon and drain on paper towels.
    Sprinkle with powdered sugar.
    Yield--about 15 to 16 fritters.
