  1. Short Ribs Beef Pot Roast Orange Baked Beans Rice

    Short Ribs (pressure cooker)

    2 Tbsp shortening 1 onion, thinly sliced 3 lbs beef short ribs 1 tsp ginger 2 tsp dry mustard 2 Tbsp
    sugar 1 tsp salt
    1/4 tsp pepper 1 clove garlic 2 Tbsp chopped parsley 2 Tbsp soy sauce 2 Tbsp white vinegar
    2/2 cup water

    Heat cooker add shortening. Saute onion lightly. Remove. Brown ribs on all sides. Combine remaining
    ingredients and pour over ribs. Top with onion. Close cover completely. Place regulator on vent pipe
    and bring up to pressure. Cook with regulator gently rocking for 25 minutes. Let pressure drop of
    its own accord

    Beef Pot Roast (pressure cooker)

    1 Tbsp shortening, margarine or butter 4 lb pot roast salt and pepper 1 onion, minced 1 bay leaf
    1 cup water

    Heat cooker and add shortening. Brown roast on all sides. Season with salt, pepper, onions and bay
    leaf; add water. Close cover securely. place regulator on vent pipe. bring up to pressure and cook
    for 45 with regulator rocking slowly. Let pressure drop of its own accord. Thicken gravy if desired.
    Add your own favourite seasonings. We usually let the pressure drop and then add potatoes and some
    extra water, start the cooking process all over and cook for 12 minutes.

    Orange Baked Beans (pressure cooker)

    2 cups pea beans
    3/4 lb bacon, diced 1 cup orange juice
    4/2 cup ketchup 2 Tbsp molasses 2 Tbsp sherry or vinegar 2 tsp salt
    5/2 tsp dry mustard
    6/4 tsp ginger

    Soak beans overnight. Drain, reserve soaking liquid. Heat cooker brown bacon. Pour off excess fat.
    Add beans and remaining ingredients. Mix well. Add enough of the soaking liquids to well cover the
    beans. Close cover securely. Place regulator on vent. Cook for 45 min with regulator rocking slowly.
    Let pressure drop of its own accord.

    Rice (pressure cooker)

    Make sure you have 2 cups water for every cup uncooked rice (Do not fill more than 1/2 full) Bring
    water to a boil. Stir in rice and return to boil. Put cover and regulator on. Bring up to pressure.
    As soon as regulator starts to come to a full rock, remove pan from heat. Let pressure drop, When
    ready open pan and fluff up rice

    Pressure cooking tips

    7) Do not fill cooker more than 2/3 full
    8) Per pound most meats take 8-10 minutes for rare 10-12 minutes for medium 12-15 minutes
    for well done
    9) Chicken Young birds 1 1/2 to 2 pounds take only 10 minutes cooking time Larger birds approx 4
    pounds will be cooked in 15 minutes
    10) If you need to stop cooking right away place pot under cool running water.
