Plantains Green Fried Plantains - Tostones (Puerto Rico)
Guincitos Verdes En Escabeche (Pickled Green Bananas) --A
Escabeche Sauce:--
2 cup olive oil 1 cup vinegar 12 peppercorn (whole
black peppers)
1/2 tsp. salt 2 whole bay leaves 1 1/2 lbs. onions, peeled
and sliced 2 cloves garlic, minced
--Part B:--
10 green bananas (plantains)
--Part C:--
8 cup water 2 Tbsp. salt
In a Calder (heavy kettle), mix ingredients included in A,
and cook over low heat for 1 hour. Allow to cool. Trim ends
of bananas and slit just the peel, lengthwise on both sides,
in a deep pot, bring to a boil water to cover bananas. Add
bananas, cover and boil over low heat for 15 minutes. Drain
and peel. Fill the pot with ingredients included and bring
rapidly to a boil. Add peeled bananas, cover and boil over
low heat for 10 minutes. Add 1 cup of water and boil for 5
minutes. Drain and allow to cool. Cut bananas into 1 inch
rounds. Place in a deep glass or porcelain dish, alternating
with the Escabeche sauce. Marinate for 24 hours. Serve as an
appetizer.
Fried Plantains
I:Crunchy not-yet ripe green plantains (one serves two
people usually)
1/4 cup vegetable oil per plantain 1 cup cold water with
salt Sm. flat board or paper towel to smash slices
II:Soft, very ripe and sweet yellow plantains
1/4 cup vegetable oil per plantain Salt
Heat oil in frying pan over medium heat. You should have 1/2
inch oil approximately. Peel plantains. Cut 1/4 inch slices
on the slant. Place in frying pan when one is hot. I. GREEN
PLANTAIN: Cook each side about 1/2 minute until golden and
hard looking. Remove from oil onto paper towel to drain.
Press each slice with board or towel on flat surface to make
it almost flat. Dip into salted water. Return to frying pan
and cook both sides again until crispy. Drain. Eat while
hot. Good with fish, meats, soups or eggs. II. YELLOW
PLANTAIN: Cook each side until golden brown and soft, about
3/4 minute. Drain salt. Eat while hot.
Green Fried Plantains - Tostones (Puerto Rico)
Peel green bananas. Cut in circles and soak in salt water.
Preheat oil in pan and place bananas in oil. Remove and
press flat. Refry until crunchy. Ready to eat.
