    Basic Pizza Dough

    4 1/2 cups all-purpose flour 1 envelope active dry yeast
    1/2 teaspoon salt 1 1/4 cups hot water

    In large bowl, combine 2 cups flour, the yeast and salt. With electric mixer, slowly beat in water;
    beat for 2 minutes, occasionally scraping bowl with rubber spatula. With mixer on medium speed, beat
    in 1/2 cup flour; beat 2 minutes, until dough is stiff. Stir in 1 1/2 cups flour.

    Sprinkle clean work surface with 1/4 cup flour. Knead dough on floured surface, 6-8 minutes. Spray
    large bowl with nonstick spray. Place dough in bowl; cover with plastic wrap and kitchen towel. Let
    rise 1 hour or until doubled in volume. Punch down dough; let rest 15 minutes. Divide dough in half.
    Sprinkle clean work surface with 2 tablespoons flour. Roll 1/2 of dough into 13" round; lift onto a
    12" pizza pan. Pinch edges to form a rim.

    1 can tomato puree 1 can tomatoes, canned -- drained
    1/2 cup chopped onion 1 garlic clove -- minced
    2/2 teaspoon basil -- crushed
    3/4 teaspoon tarragon -- crushed
    4/4 teaspoon oregano -- crushed

    Combine all ingredients in large skillet; heat to boiling. Reduce heat, simmer for 10 minutes. Cool.

    Pizza Hut Crust

    2 packages dry yeast
    2/3 cup warm water 2 teaspoons sugar 2 cups cold water 3 tablespoons corn oil 2
    tablespoons sugar
    3/4 teaspoon garlic salt 1 teaspoon salt
    4/2 teaspoon oregano 6 1/2 cups all-purpose flour -- (up to 7 cups)

    Sprinkle yeast over warm water and stir in the sugar. Let stand for about 5 minutes or until
    very bubbly.

    Combine remaining ingredients with about 1/2 of flour, beating to a smooth batter. Beat in the yeast
    mixture and then with a sturdy spoon work in the remaining flour until you can toss it lightly on a
    floured surface and knead it until it feels elastic in texture. The kneading may require about 2/3
    cup additional flour, that you will be coating your hand with as you knead the dough. Don't let the
    dough become too stiff. Place dough in a large plastic food bag sprayed with vegetable coating
    spray. Let dough rise until doubled in bulk. When dough has doubled, punch it down and shape it to
    fit 2-15" round pizza pans that have been greased and dusted with cornmeal.

    To make pizza, add sauce and toppings. Then let rise for about 20 minutes in a warm place. Bake at
    4500F for 20-25 minutes. Bake only one pizza at a time on the center rack of the oven.

    2/3 cup grated Parmesan cheese 8 ounces pepperoni sausage -- thinly sliced 8 ounces mushrooms,
    canned -- drained

    Mix together sauce ingredients. Spread on pizza crust . Then top with remaining ingredients.

    Traditional Pizza Dough

    2 3/4 cups bread flour 1 teaspoon salt 1 teaspoon active dry yeast 1 teaspoon sugar
    3/4 cup warm water 1 tablespoon olive oil

    In a small bowl, combine yeast, sugar and 1/4 cup water; leave until frothy. Add yeast liquid to
    flour with remaining water and oil. Mix to a soft dough; knead on a floured surface 10 minutes until
    smooth. Place in a greased bowl; cover with plastic wrap. Let rise in a warm place 45 minutes or
    until doubled in size. Punch down dough and knead briefly. Oil a 12" pizza pan. Place dough in
    center of pan; press out to edges with you knuckles. Pinch up edges to make a rim. Use as directed
    in recipe.
