I haven't found the Vietnamese Bread pudding recipe but I have found a recipe that might be close if
you make a bit of a modification. I found this in a book that I least expected to have anything even
close to what we're looking for <G>.
Capirotada - Bread Pudding (From "Pembina's {North Dakota, USA} Bicentennial Cookbook 1797-1997"

12 slices white bread 1 cup grated cheddar cheese** 4 ripe bananas
1/2 cup raisins 3 1/2 cup hot water or milk 2 cup sugar 4 TBSP butter 1 tsp vanilla 1 tsp ground
cinnamon or ground anise
Butter a 9 x 13" pan. Place a layer of bread to line up the bottom. Sprinkle 1 sliced banana, 1/4
cup grated cheese, and 1/8 cup raisins on bread. Keep layering until bread, cheese, and fruit are
used or until pan is full. Combine hot water, sugar, butter, vanilla, and cinnamon or anise together
to make a thick syrup. Pour over layers of bread, soaking all of the top layer. Make sure it is all
moistened. Bake at 350 F. for 20-25 minutes or until cheese melts. Serve hot.
** Rosie - I think you could substitute coconut for the cheese and it might be close to what you
were searching for. Let me know! Cyndi
