My recipes aren't anything special. I just take everyday recipes and
substitute LC ingredients in place of the sugar and flour. And my flour
substitute uses some ingredients that you'd have to order online from
Honeyville.
As for coconut oil, I just substitute 3/4 the amount for butter or
shortening called for and add butter extract if it's something where the
butter flavour would affect the outcome of the product. I do substitute it
1 for 1 if it's a liquid oil like canola, though. There's no real magic to
it. :-)
I've already posted my sugar substitute but I'll post my flour substitute
in a separate message for you if you're really ambitious enough to get the
ingredients.

I have polydextrose, bake mix, almond flour, wheat gluten, soy flour,
carbquick, maltitol, isomalt, liquid splenda, cyclamates, flax meal, oat
flour, polydextrose based chocolate chips, nuts, soy flour etc. The only
likely ingredients I would be missing is wpi or resistant starch and I can
work around that.
The reason why I like to use TNT recipes is that I don't bake often and
things like polydextose and carbquick are valuable and hard for me to get.
As a result I don't like to experiment with them too much and waste it.
I'll just look for some traditional recipes and do some work arounds.
