Pineapple-Orange Sunshine Cake
1 box Sweet Rewards Yellow Cake Mix
1/4 cup Apple Sauce
4 Eggs
1 (11oz.) can Mandarin Oranges in Light Syrup
1 (8oz.) container Cool Whip Light
1 (3.4oz.) pkg. Instant Vanilla Pudding
1 (15 1/2oz.) can Crushed Pineapple in juice
Preheat oven to 350 degrees. In a large bowl, stir together cake mix, eggs
and apple sauce until moist. Beat by hand for 2 minutes. Coat a 9"x13"
cake pan with cooking spray ( can also use two 8" round cake pans ). Pour
batter into prepared pan and bake for 30- 35 minutes or until a toothpick
inserted into the center comes out clean. Cool completely. In a large
bowl, mix toogether oranges, cool whip, pudding mix and pineapple until
well blended. Spread over cooled cake. Store any leftover cake covered int
the refrigerator.
