  1. Pineapple Casserole

    3/4 cup sugar
    6 Tbsp flour
    2 cup sharp cheddar cheese, grated
    2 (20oz) cans pineapple chunks, drained (reserve 6 Tbsp juice)
    1 cup cracker crumbs (like Ritz)
    1/2 cup butter, melted (I use less)

    Preheat oven to 350 F. Grease 1-1/2 qt. casserole dish. Combine sugar and
    flour, stir in cheese, add drained pineapple & stir till well combined. Put
    into casserole dish. Combine cracker crumbs, butter & reserved juice. Mix
    well. Crumble over pineapple mixture. ake 25 to 35 minutes. Very good as a
    side with ham or pork or chicken.
