Picnic menus

  1. Over the summer, I plan to go on picnics with my
    girlfriend on a regular basis. I came up with the
    following menus, and thought some of you might like to see
    them as well. I can keep everything chilled, but the
    places we'll be picnicking don't have any cooking
    facilities, so everything will be pre-made and must be
    eaten chilled or at the ambient temperature. None of the
    menus are very extensive; it'll just be the two of us and
    she's not the hearty eater that I am.

    I welcome comments and suggestions for additional picnic
    menus, or suggestions for altering the menus shown. The
    items with *'s are bought from a store rather than
    prepared by me, so if you want any of the recipes for the
    items which DON'T have *'s, let me know. Oh, and a couple
    of the iced teas are from The Republic of Tea; I've
    denoted those with a +:

    Grilled chicken wraps Yogurt-cucumber dipping sauce Lebanese
    stewed green beans Baklava

    Pan Bagnat Moroccan Carrots Saffron cooler Chocolate
    Truffles*

    Salade Niçoise Sourdough* White wine* Strawberries and cream

    Goat cheese torta Sourdough* Peaches* Blackberry-Sage iced

    White Gazpacho (she doesn't like tomatoes) Mixed-starter
    bread Cold roasted chicken Homemade mayonnaise Chive butter
    Marinated artichoke hearts* White grape juice with lemon
    Peach Melba cobbler

    Chilled Asparagus-Lemon soup Herb Bread Emeril's Lobster
    and Vanilla Bean Salad Raspberry-Quince iced tea+
    Shortbread cookies

    Baba Ghanoush Pita* Romaine* Egg salad Olives* Spiced Honey-
    Lemon Iced Tea Galub Jamun (Yes, I know it's not Middle
    Eastern. Sue me.)

    I've got lots of picnic-friendly recipes floating around
    waiting for a menu in which to fit, e.g., I don't have any
    menus with quiches, frittatas, pasta salads, or rice (or
    other grain) salads, and they'd all work well as picnic menu
    items. I just started ruminating about this last night, so
    I'll eventually come up with menus which include those
    items, but in the meantime I thought I'd see what this group
    had to say about picnic menus.

    The only suggestion I have is to ditch the Republic of Tea
    teas and go with Mariage Freres. The difference in quality
    is astounding--especially in side-by-side taste tests. My
    personal favourite iced is Bolero (even though it isn't on
    the recommended list for iced teas) though Aida is also good
    iced. Marco Polo is a heavier version of Aida, without as
    much of a honey flavour. It's one of their most popular
    blends, I think. Casablanca (green tea with Moroccan mint
    and a hint of bergamot) is on their iced tea list and would
    suit your menus, but I actually didn't like it much iced. I
    much prefer their floral-fruity blends.

    If you're interested in their teas, try
    www.theculturedcup.com (note: I have no interest in the
    company except as a very satisfied customer). They have
    the best selection of Mariage Freres teas that I've found
    on-line (except for the Mariage Freres site, of course,
    which can be found at www.mariagefreres.com but you'd have
    to use their French or Japanese site since they still
    haven't done anything with the English version.). You can
    also find descriptions of the teas so you're not buying
    blindly. They also have great customer service--very
    personable and very helpful.

    Oh...peach cobbler...I'm imagining soggy peach cobbler. Do
    you have a good way of preventing that?

    Make sure to give them some pickle hats; they are so
    conducive to a romantic setting <wink>
