  1. If they're blackeyes, they do, anyway. Here's a post from me dating
    from 1997:

    Grind in a food processor a pint of fresh black eyes, a quarter cup of
    bread crumbs, the juice of a lime, three cloves of garlic, a
    tablespoon of fresh mint, a teaspoon of Thai fish sauce, a teaspoon of
    soy sauce, a teaspoon of fresh lemon verbena (the lemon grass isn't
    doing too well as yet in the herb patch this spring), a little fresh
    Mexican mint marigold (Texas taragon), one dried japone chile. I had
    to add a touch of water to aid the processing.

    Formed the paste into balls using a soup spoon. Fried in olive oil
    and kept warm in the oven while I made the sauce:

    Popped a scant tablespoon of black mustard seeds in oil, added a dash
    of turmeric, one yellow bell pepper, chopped, and 6 crimini mushrooms,
    sliced. Sauteed them, added a chopped chipotle chile and let cool a
    little. Put it all in the blender and added the juice of a lime and
    buzzed it up.

    We put one or two pea patties on a lettuce leaf dolloped on the sauce,
    and ate 'em like veg burritos. Messy, tasty, and fun.

    They're pretty good. I plan on making a version with the stuff I have
    on hand for some guests tonight.

    We get fresh blackeye peas in most of the chain stores here in El Paso at
    this time of year. One can also buy them fresh-frozen.

    this time of the year.
