  1. Peanut Sauce - Microwave

    1 Tbsp vegan margarine or olive oil 2 Minced Shallots 1 cup homemade Chunky Peanut Butter 1 cup
    Water 6 Tbsp Fresh Lime Juice 1 Tbsp Minced Fresh Ginger
    1/2 tsp Oriental Chili Sauce *
    2/4 tsp Coconut Extract 2 Tbsp Oriental Sesame Oil

    * Use oriental chili sauce with garlic.

    Microwave oil and shallots in a medium microwave safe bowl, covered with plastic wrap, on high power
    for 1 minute or until oil is very hot. Stir in remaining ingredients except sesame oil until
    blended. Microwave covered for 4 minutes on medium power or until mixture is well softened. Stir in
    sesame oil. If sauce is too thick, thin with water. Serve warm or at room temperature with crisp
    cooked vegetables or as a sauce for satay grilled marinated tofu.
