Cake
2 cups flour
1 cup sugar
2 teaspoons baking powder
1 teaspoon salt
1 1/2 teaspoons grated orange peel
1/2 cup butter or margarine -- softened
1 cup milk
1 teaspoon vanilla
2 eggs -- slightly beaten
1 cup fresh or frozen sliced peaches -- thawed
1 cup fresh or frozen blueberries -- thawed
Glaze frosting
1 cup powdered sugar
1/4 teaspoon almond extract
4 teaspoons milk
Heat oven to 350 degrees. Grease 13x9" pan.
In large bowl, combine flour, sugar, baking powder, salt and orange peel.
Mix well. With pastry blender or fork, cut in butter until crumbly.
Add milk, vanilla and eggs. Stir until dry ingredients are moistened.
Pour 3/4 of batter (2 1/4 cups) into prepared pan. Top with peaches and
blueberries. Spoon remaining batter over fruit.
Bake for 35-45 minutes or until edges are golden brown. Cool 30 minutes.
In small bowl, blend glaze ingredients, adding enough milk for desired
drizzling consistency. Drizzle over coffee cake.

1 cup shortening
1 1/2 cups sugar
2 eggs
1 cup fresh peaches -- pitted and chopped
3 cups all-purpose flour
1 teaspoon salt
1/2 tablespoon baking soda
3/4 cup chopped walnuts
Preheat oven to 325 degrees F.
Grease a cookie sheet.
Beat shortening and sugar together.
Blend eggs and fruit into the shortening and sugar mixture.
Stir flour, salt, baking soda and nuts into the egg mixture. Mix well.
Drop dough by teaspoonfuls onto the greased cookie sheet. The cookies will
double in size while baking, so set the cookies far apart on the cookie
sheet.
Bake for 12 to 15 minutes

1/2 cup unsalted butter -- melted
1 cup all-purpose flour
2 cups sugar
3 teaspoons baking powder
1 Pinch salt
1 cup milk
4 cups peeled, pitted and thinly sliced fresh
peaches -- (5-6 medium)
1 tablespoon fresh lemon juice
Several dashes ground cinnamon or ground
nutmeg -- optional
Preheat oven to 375 degrees.
Pour the melted butter into a 13 by 9 by 2-inch baking dish.
In a medium bowl, combine the flour, 1 cup sugar, the baking powder, and
the
salt and mix well. Stir in the milk, mixing until just combined.
Pour this batter over the butter but do not stir them together.
In a small saucepan, combine the peaches, lemon juice, and remaining cup
of
sugar and bring to a boil over high heat, stirring constantly.
Pour the peaches over the batter but do not stir them together.
Sprinkle with cinnamon or nutmeg if desired.
Bake in the preheated oven for 40 to 45 minutes or until the top is
golden-brown. Serve warm or cold.

1/2 cup condensed milk
2 cups heavy cream
2 cups milk
2 cups peeled, pitted and mashed fresh, very -- ripe
peaches
Beat eggs and sugar together until very creamy.
Add vanilla, condensed milk, heavy cream and milk.
Churn-freeze to a mush.
Add peaches and continue to churn-freeze until firm.

3 cups all-purpose flour
1 1/4 cups sugar -- divided
1/2 teaspoon baking powder
1/4 teaspoon salt
1 cup cold butter or margarine
2 cans (29 ounces each) sliced peaches -- drained
OR
13 small fresh peaches -- peeled and sliced
1 teaspoon ground cinnamon
Topping
4 egg yolks
2 cups sour cream
2 tablespoons sugar
1/4 tablespoon ground cinnamon
In a bowl, combine the flour, 1/4 cup sugar, baking power and salt. Cut in
butter until mixture resembles coarse crumbs.
Press onto bottom and 1" up sides of a greased 13x9" baking dish.
Arrange peaches over crust.
Combine cinnamon and remaining sugar. Sprinkle over peaches.
Bake at 400 degrees for 15 minutes.
Meanwhile, in a bowl, combine egg yolks and sour cream. Spread evenly over
peaches.
Combine sugar and cinnamon. Sprinkle over top.
Bake 30-35 minutes longer or until golden.
serve warm or cold.
Store leftovers in the refrigerator.
