  1. Peach Enchiladas

    2 8-ounce tubes refrigerator crescent rolls
    1 cup (2 sticks) butter
    4 firm ripe peaches, peeled and quartered
    1 1/4 cups sugar
    1 teaspoon cinnamon
    1 12-ounce Mountain Dew (or Sprite)

    Preheat oven to 350 F. Melt butter and add sugar and cinnamon. Set
    aside. Unroll crescents and place a peach quarter in each one. Roll from
    large end to small. (If desired, after rolling, encase peach with dough
    by gently stretching and pinching dough together.) Place rolled peach
    quarters in a 12x10x2-inch baking pan (or in an 8x8-inch pan, if halving
    the recipe). Pour or spoon butter mixture over all. Pour Mountain Dew
    (or Sprite) on top. Bake, uncovered, for 45 minutes. Serve as is or
    with ice cream. (This recipe can be easily halved.)
