  1. Peach Dessert for 100

    2 gallon cans of sliced peaches, drained but reserve the juices
    3/4 box (5 lb. box) cake mix, yellow preferred
    1 1/2 lbs. brown sugar
    1 to 1 1/2 lbs. butter or margarine
    cinnamon, a good amount but not over-powering the taste

    Pour peaches in a single layer onto 2 large bakers baking sheets with
    1" sides all around. Add some of the juice back to the peaches to keep
    the peaches really moist-looking.
    Mix cake mix, sugar, butter and cinnamon together until forming
    crumb-size bits. May need to add more or less butter to get the right
    consistency for the crumbs. Sprinkle this mix over the top of the
    peaches..
    Bake at 350° for 1 hour or until golden brown. Serve in bowls with ice
    cream.

    Yield: 75-100 depending on size of serving
