  1. Please, post a recipe if someone knows this Italian seafood pasta
    dish with mushrooms, shrimps or prawns, and a white wine as an
    important ingredient. Originally called "Penne mare-monti".

    I searched Google and found recipes on Italian language only. I
    recently asked in a moderated rec.food.recipes newsgroup and got no
    replies.

    I have found many, this seems the most correct, others listed from triffles
    to sausages. Just one suggestion: I'd double the indicated amount of white
    wine, use thing same wine you'll be drinking with this dish, and I'd also
    double the amount of extra virgin olive oil, since they both look scarce for
    the indicated amount of pasta and seafood.

    Spaghetti Mare e Monti (sea and mounds spaghetti)
    Serves 6

    Ingredients:
    500g spaghetti
    300g moscardini, musky octopus, baby octopus
    300g shelled shrimps
    300g champignon mushrooms
    a bunch of minced parsley
    2 ripe tomatoes
    1/2 glass of white wine
    2 tablespoons extra virgin olive oil
    salt & pepper

    Clean thoroughly the mushrooms, slice them thin and sautee' for 1 minute in
    a skillet with few olive oil.
    Add the moscardini and the wine, stir, cover and let over low fire for about
    40 minutes, adding more wine if necessary (IOW: if not enough wet). After
    this time, add the peeled and diced tomatoes, add salt and pepper and cook
    for another 15 minutes.
    Now add the shrimps and the parsley, stir and cook for the last 2 minutes.
    Cook pasta al dente, rinse and put in the skillet with the dressing. Serve.

    Well, to be clearer: musky / baby octopus are just different names for
    moscardini, you don't have to gather all of the three 😉

    I have posted several versions of a dish i intuited, i have no idea if
    it is anything like the specific recipe you are requesting but it's
    ingredients are so very similar i pass my crude, un written, from memory
    instructions (i wont call it a recipe) along.

    One major difference between what i make and your request is the
    inclusion of chicken breast meat. As i think about composing this for
    posting, it occurs to me the shrimp and other ingredients could be
    cooked in schmaltz (chicken fat) rather than butter, or even better a
    bit of both. But either way i take ....

    ....left over chicken meat in small dice, a sufficient quantity of shrimp
    or prawns, green onions, chopped, butter, s & p, garlic, mashed, white
    wine, mushrooms.

    Using chicken fat or butter, saute the chicken, mushrooms & prawns with
    the garlic and onions, this is very quick and should not take more than
    a few minuets, allow the mushroom water to evaporate, even less if using
    pre cooked small 'salad shrimp', add the chicken, a bit more butter and
    enough white wine to make a sauce, let it reduce a bit and serve over
    pasta or rice.
