Hello my dear Michael. Ok, you have reason, I will do ASAP. I have
buyed a new camera and now I Am playing with it.
    Are you well?

I am doing quite well and thank you for asking. It's good to see you
around again. I miss your recipes. Is your oven still spotlessly clean 😉

    Michael

Oh, noooo! My oven has been never clean. I use it very often, especially to
    make my weekly "Grissini".

The name of this ricotta is "Vallelata". I dont' know if you will
find it ( I hope). Sorry but I couldn't send it in America because it
    is a fresh cheese 🙂

Don't worry about that. Just bring some when you come to visit us, as
you have said you will do some day. :o)

Visit, schmisit. Tell her to pack it in dry ice and ship it over 😉

My advice, then, is not to cook duck or goose in an oven not cleaned.
Select road to follow-- cook greasy things and clean or never cook
greasy things and don't clean. The other road leads to fires.

It is solid CO2 or carbon dioxide gas I believe. It's what they use to
create "smoke" at the opera. I've not seen it here... wonder why? I
don't see chef's blow torches, either.

    Pancetta Wrapped Shrimp

    Recipe By: Calgary Cook-In 2001
    Serving Size: 6
    Preparation Time: 0:00
    Categories: Appetizers/Nibblers

    Amount Measure Ingredient Preparation Method
    20 basil leaves
    1/2 tsp paprika
    1/2 tsp cayenne
    1/2 tsp curry powder
    1/2 tsp ground cumin
    1/2 tsp ground coriander
    1/2 tsp salt
1/2 tsp freshly ground black pepper
    1 tbsp olive oil
    2 tbsp sugar
    2 tbsp fresh lemon juice
20 jumbo shrimp (ed. note: 20 is only enough
    if your two!)
10 thin slices lean pancetta sliced in half

Combine the first 11 ingredients - except the basil leaves, in a medium
sized mixing bowl. Add the shrimp and marinate for 30 minutes. Wrap the
shrimp with the pancetta and a basil leaf and secure with a toothpick.
Preheat the barbeque and brush the grids with oil. Grill on high heat, 3
to 4 minutes per side, until the shrimp becomes opaque and curls.
    Enjoy!!

Gnammmmm: Good recipe. Do you keep the skin of shrimps?

Be assured that it will not work unless you rush straight to the airport
and put it on a direct flight to wherever it must go. It's very
volatile and in the postal service would disappear in a few hours,
leaving the next 3 months for terrible things to happen.
