Here's a link to an article titled "Safe Treyf": New York Jews and Chinese Food," adapted from an ethnographic journal. It has some interesting historical information, even if you don't fully buy all their hypotheses as to causes. I ran across it while puzzling about why a New York Jew has so much to say about Chinese cooking.
