I know... I know. It's totally OT. But I just made this red snapper dish
that's so incredibly good I thought I'd share it with you. It's from
Epicurious and it's called "FISH IN "ACQUA PAZZA." As one of my cousins
would say, it's foodgasmic. :^)

Arrange snapper fillets in single layer in large nonstick skillet. Add 1/3

remaining 1/4 teaspoon salt and 1/4 teaspoon pepper. Bring to boil. Reduce
heat to medium-low, cover and simmer until fish is just cooked through,
about 15 minutes. Transfer fish to platter. Boil sauce in skillet until
thickened, about 10 minutes. Spoon sauce over fish and sprinkle with
parsley.
Serves 4.

It's quick and simple to make, requiring almost no preparation. This would
be an excellent entree after a century ride. (There. Now it's on topic).
