  1. Oriental Yellow Tomato Preserves

    4 pounds yellow tomatoes
    1 lemon, thinly sliced
    3 cups water
    6 2/3 cups sugar
    1 piece ginger root (about 21/2 inches long)

    Boil the lemon in 1/4 cup water for 5 minutes. Set aside. Heat the
    remaining 23/4 cups water, plus the sugar, and simmer for 5 minutes. To
    the syrup, add the skinned and quartered tomatoes and the lemon mixture.
    Mix well. Boil until the tomatoes are clear and the syrup thickened. Ladle
    into hot, sterilized jars and seal.
