Orange Flax Sed Muffins
Here is a good recipe that comes from the Flax Council of Canada and
Saskatchewan Flax Development Commission, that was included in a handout
from Prevention Magazine. www.prevention.com They might have more on
their site.
1 1/2 cup oat bran
1 cup flour
1 cup flax seed
1 cup wheat bran
1 tbsp. baking powder
1/2 tsp. salt
2 oranges, quartered and seeded
1 cup brown sugar
1 cup buttermilk
1/2 cup canola oil
2 eggs
1 tsp. baking soda
1 1/2 cup golden raisins
Preheat oven to 375 degrees. Line 2 12 cup miuffin pans with cup cake
papers, or coat with cooking spray. In a large bowl, combine oat bran,
flour, flax seed, wheat bran, baking powder and salt. Set aside. In a
blender or food processor, combine oranges, brown sugar, buttermilk,
oil, eggs and baking soda. Blend well. Pour mixture into dry
ingregients. Mix until well blended. Stir in raisins.
Divide batter evenly among muffin cups. Bake for 18 - 20 minutes, or
until inserted toothpick comes out clean. Cool in the pans 5 minutes
before removing to a cooling rack.
Makes 24 muffins.
