    Apricot Orange Cranberry Breads

    3 1/2 Cup All-purpose flour
    1/2 teaspoon Double-acting baking Powder
    1 teaspoon Baking soda
    1 teaspoon Salt
    1/2 cup (1 Stick) unsalted butter Softened
    1 cup Sugar
    1 tablespoon Plus 1 teaspoon freshly Grated orange zest
    2 large Eggs
    2/3 cup Fresh orange juice
    2/3 cup Milk
    2/3 cup Finely chopped dried Apricots
    2/3 cup Chopped walnuts or pecans
    3 cups Cranberries ; picked over And chopped

    Into a bowl sift together the flour, the baking powder, the baking soda,
    and the salt. In a large bowl with an electric mixer cream the butter with
    the sugar and beat in the zest and the eggs, 1 at a time. Beat in the
    orange juice and the milk and beat the mixture until it is combined well
    (it will appear curdled). Add the flour mixture and beat the batter until
    it is just combined. Stir in the apricots, the walnuts, and the
    cranberries, divide the batter among 5 buttered and floured loaf pans, each
    5 3/4 by 3 1/4 by 2 inches, and bake the breads in the middle of a
    preheated 350F. oven for 40 to 45 minutes, or until a tester comes out
    clean. Remove the breads from the pans and let them cool, right sides up,
    on a rack. The breads keep, wrapped well in plastic wrap and foil, chilled
    for 1 week or frozen for 1 month.

    Chocolate Pistachio Orange Loaf

    3/4 cup Sugar
    1/4 cup Butter ; softened
    2 Eggs
    1/2 cup Sour cream
    1 tsp Orange peel ; Grated
    1 Tbsp Orange extract
    3 cup All-purpose flour
    1/2 tsp Baking powder
    1 tsp Salt
    3/4 tsp Baking soda
    1 cup Mini chocolate chips Semi-sweet
    1/2 cup Salted pistachios ; ground
    -GLAZE-
    1/2 cup Powdered sugar
    1 tsp Orange juice

    Heat oven to 350F degrees. In large mixer bowl combine sugar and butter.
    Beat at medium speed until creamy. Add eggs; continue beating until well
    mixed. Add sour cream, grated orange peel and orange extract. Continue
    beating until creamy. Add flour, baking powder, salt and baking soda.
    Continue beating until just mixed. (Do not overmix). By hand, stir in
    chocolate chips and ground pistachios. Spoon batter into greased and
    floured 9 X 5 inch loaf pan. Bake for 60-70 minutes or until toothpick
    inserted in center comes out clean. (If browning too quickly, cover loaf
    with aluminum foil). Cool 10 minutes; invert onto cooling rack. Cool
    completely. In small bowl stir together powdered sugar and enough orange
    juice for glazing consistency; drizzle over cooled bread.

    Cranberry Orange Nut Bread

    2 cup Flour
    1/2 tsp Salt
    1/2 tsp Baking powder
    1/2 tsp Soda
    1 cup Sugar
    1 Orange ; grate rind juice
    2 Tbsp Oil
    10 Tbsp Buttermilk
    1 Egg
    1/2 cup Nuts ; chopped
    1 cup Raw cranberries ; chopped Or Coarsely ground

    Sift together flour, salt, baking powder, soda and sugar. Grate rind of
    the orange, extract the juice, and add 2 tablespoons melted shortening, or
    salad oil, and buttermilk to make 3/4 cup liquid. Beat egg well, combine
    with above liquid, and add to the dry ingredients. Add chopped nuts and raw
    cranberries, chopped or coarsely ground. Mix well. Pour in greased loaf
    pan. Bake 325~ for 1 hour. Store 24 hours in refrigerator before cutting.

    Date Nut Orange Bread

    2 Eggs
    1/2 cup Sugar
    1/2 cup Honey
    2/3 cup Orange juice
    6 tablespoon Butter ; melted
    1 teaspoon Vanilla
    2 cups Flour
    2 teaspoons Baking powder
    1/2 teaspoon Baking soda
    1 cup Chopped dates
    3/4 cup Chopped walnuts

    Beat together ingredients in left column (eggs through vanilla) until
    blended. Add remaining ingredients all at once and stir until mixture is
    just moistened. Do not over mix. Pour mixture into three small greased loaf
    pans (6x3x2) and bake at 350 for 25 minutes, then lower temperature to 325
    and bake for 10 minutes. Test with tooth pick for doneness. Allow to
    cool in pans for 10 minutes then remove from pans and cool further on rack.
    Serve with Orange Marmalade Butter :

    1/4 cup Butter
    1 cup Honey
    1 Egg
    1/2 Tbsp Grated orange rind
    2 1/2 Cup Sifted flour
    2 1/2 Teaspoon Baking powder
    1 tsp Salt
    3/4 cup Fresh orange juice
    3/4 cup Finely chopped walnuts

    Cream butter, continue creaming while adding honey in a fine stream. Add
    egg and beat well, then add orange peel. Sift flour once, measure, add
    baking powder and salt and sift together again. Add flour alternately with
    orange juice, a small amount at a time to first mixture, beating after each
    addition until smooth. Stir in nuts, blend well. Pour into 9x5x3" pan lined
    with waxed paper, and greased loaf pan. Bake 1 hour at 325 (slow) degrees
    or until done. Let cool in pan 10 minutes. Turn out of pan, let stand until
    cold. Wrap in waxed paper or aluminum foil. Store overnight to blend
    flavors and for easy slicing.

    Makes 1 loaf.

    1 cup Yellow corn meal
    1/3 tsp Salt
    3/4 cup Sugar
    4 tsp Baking powder

    1 cup 2 % skim milk
    1 tsp Orange extract
    1 can Economy mandarin orange
    Slices

    Grease an 8x8x2 inch pan. Mix together well, stirring so that orange
    slices break apart. Pour mixture into pan. Bake at 425 degrees for 30
    minutes, or until a toothpick inserted in the center comes out clean.

    Orange And Date Bread

    1 medium Orange
    2/3 cup Dates ; pitted
    1/2 cup Walnut meats
    2 Tablespoonfuls butter
    1/2 cup Hot water
    3/4 cup Sugar
    1 Egg beaten
    2 cups Flour
    1/4 Teaspoonful salt
    1/2 Teaspoonful soda and
    1/2 Teaspoonful baking powder

    Cut whole orange (peel and pulp) into 6-8 sections. Put orange sections,
    dates and nuts through mincer. Add hot water and butter. Pour in well-beaten
    egg. Sift flour, salt, baking powder, soda and sugar. Add to fruit mixture.
    Bake in greased loaf pan in moderate oven(350 F) for 11/4 hours. Cool
    thoroughly before slicing. Serve with orange marmalade or cream cheese balls
    which have been rolled in grated orange peel.

    Orange Bread

    2 Oranges ; Grated Rind
    2 1/4 Cup Water
    3/4 cup Sugar
    1 Egg ; Beaten
    1/2 cup Milk
    1 3/4 Flour ; Sifted
    2 tsp Baking Powder
    1/2 tsp Salt
    1/2 cup Pecans ; Chopped

    Boil the orange rind, 3/4 cup water, and 1/2 cup sugar slowly until it
    forms a syrup. Sift the flour, baking powder, and salt together. Mix
    the remaining 1/4 cup sugar with the beaten egg, beat well, and then slowly
    add the milk and the sifted dry ingredients. Add the syrup; then stir in
    the pecans if your like them. Pour into a well-buttered coffee tin, cover
    with two thickness of wax paper, and tie with string. The can must not
    be more than 2/3 full. Put on a rack, pour in 2 cups water, cover, and
    steam without pressure for 15 minutes. Cook under 15 lbs pressure for 5
    minutes. Reduce pressure immediately, remove from tin, and cool on a clean
    cloth. Slice while still warm.
