Old Fashioned Egg Pie Ma Hannah
Homemade Pie shell [Or, Pillsbury Refrigerated Pie Crust]
1 cup granulated sugar 2 Tbsp flour 1 tsp Nutmeg
1/8 tsp salt 3 eggs, beaten lightly 1 1/2 cups milk* or Half & Half, heated to scalding point -- NOT
boiled 2 Tbsp butter, melted**
2/2 to 1 teaspoon Pure Vanilla Extract or Pure Almond Extract -- optional
Preheat Oven to 250 Degrees F. Prepare pie crust in 9" pie dish. Partly bake it according to package
directions, but do not brown it. Remove from oven. Increase Oven temperature to 400 Degrees F.
Combine dry ingredients, mixing well. Lightly beat eggs and add to dry ingredients. Add milk and
melted butter. Pour into partly baked pie crust. Bake at 400 Degrees F. for 10 minutes. Reduce heat
to 325 Degrees F. and bake 30 minutes longer or until firm.
