  1. No-Bake Pumpkin Cheesecake Pie

Even my father in-law loves this one! It's so easy too!

Prep: 15 minutes Refrigerate: 4 hours

1-1/4 cups cold milk 1 cup canned pumpkin 2 pkg. (3.4oz) Instant Pudding & Pie Mix Cheesecake Flavor
1 tsp pumpkin pie spice 1 tub (8 oz) Whipped topping thawed and divided 1 premade Graham Cracker Pie
    Crust (6 oz.)

    Optional Streusel Topping
1/2 cup chopped walnuts 2 Tbsp. brown sugar 1 Tbsp. butter or margarine

Pour milk and pumpkin pie into large bowl; stir until smooth. Add pudding mixes and spice. Beat with
a wire whisk until well blended. (mixture will be thick) Gently stir in 1/2 of the whipped topping.
Spoon into crust. Refrigerate 4 hours or until set. Meanwhile, mix walnuts, brown sugar, and butter
into small microwavable bowl. Microwave on High 2-1/2 minutes or until bubbly. stirring after 1-1/2
minutes. Cool. sprinkle walnut mixture on pie just before serving. Top each serving with the
    remaining whipped topping.

I had a little trouble with the streusel topping and made a big mess. The pie is fabulous without
the streusel topping and makes for a great gift that takes little time during these busy holiday
times. ENJOY!!! Let me know what you think!
