I've just changed the stem on my commuter bike for a slightly different geometry to try and shift the balance a bit. I had to add anther spacer to get the height right but it was all pretty straightforward.
When I put it back together there felt like there was too much play in the steerer so I made sure everything was loaded properly before tightening everything up. It feels okay on a short test ride but is there any other way to confirm this?
I can't believe that this is the first time I've had to work on a stem of this type. -- Cheers,

Sounds like an aheadset type threadless headset - you tighten the top bolt before tightening the side pinch bolts. So long as it doesnt have play and isnt binding when you pick the front up and turn the bars it will be just fine (assuming you havent left the pinch bolts loose enough for them to come loose in future).

As long as the steerer is a few mm below the top of the stem, you tighten (not too tight) the top cap while the pinch bolts are totally slack and then do the pinch bolts up good and tight there shouldn't be a problem. It's possible that the star nut has pulled up in the steerer, in which case undoing the cap bolt a few turns and tapping it down should reset it with room to tighten.
