  1. I've got a 105 triple and I'm wondering if I need the granny. I hear people talking about getting rid of granny and going to a compact double. What's the difference between a regular double and a compact double? I don't ride as much as I should (2-3 short rides a week). I like going up, and there have been times I was grateful to have Granny (Sometimes I wish I would have also had Jethro and EllyMay helping Granny push.)
It there a good combination of crank-cassette that can take granny's place?

Your crank probably has a 30 granny and it could be even smaller. A compact double can only have a 33 small ring. So with a compact, you would need the dog to help Jethro and Ellymae push.
