Family and friends find the 1-1/2 to 2 lb. tenderloin
roasting method I use to be simplest and extremely tasty. I
lightly brush oil all over, then well cover with Penzeys'
Baravian blend seasoning to fry-roll the meat in quite hot
cast iron to well brown all around, reserving the bits left
in the pan when I take the roast out for the oven cooking.
Just a bit of water or apple juice goes into the cast iron
for reheating and thinning down for a serving drizzle that
