i will be going for a downsized mass ride soon, using a MTB and going at a speed limit of 15Km/h.
is there anything i could do to train up my stamina before the event?
the total distance is 30+km, the route i have never ridden before.
i only currently own a 5-6 speed foldable, and it's a pain on going on slopes.

1/2 day a week ride speed intervals at 15km/h for as long as you can hold, as many times as you can sustain.
1/2 day a week ride 30km or 2 hours at a steady pace - that you can just about sustain for the duration of the ride.
Then you're working on your speed and stamina - you bring them both together at the race.
