My weight lifting dilemma: HELP!

  1. It takes me about a month to lose 4 lbs...I can only lose at most 1 lb
    per week due to my metabolism and limited time to do cardio. I lost
    40 lbs this year and decided Im ready to bulk up and add muscle...

    Im really concerned that after 2-3 months of bulking and eating lots
    of food that I will gain a lot of fat which will takes months or even
    a year to get rid of. Therefore I am considering doing 1 or 2 weeks
    of bulking at a time, followed by cutting. This way I will never get
    too large like a linebacker.

    1) Will my method work, or is it too inefficient? Do you have better
    advice for me?

    2) how will I know what percentage of my weight increase is muscle and
    not fat during my bulking phase?
