My First Spaghetti Squash

  1. I've been reading about this stuff forever, but have always had a prejudice
    against anything that called itself Squash.

    I got adventurous the other day and bought one. Baked it and scraped out
    the strands and added butter. Damn! This stuff is good. If you like
    carrots, you'll like this.

    I'm also making a batch of butternut squash soup. I'll report back later
    with the results.

  2. I agree, spaghetti squash is awesome and it is also very universal in
    cooking. I have made some wonderfully tasty dishes with it.
    One of them is with a homemade low carb alfredo sauce. Just cooked the
    squash, while it was boiling, I made an alfredo sauce with chicken, then
    served it over the squash. YUMMY!
    Another thing I luv to do with it is make a big batch of red sauce, little
    bit of onion, garlic, a few fresh tomatoes and a lot of burger. I cook the
    squash and then mix it in with the sauce, put it in a baking dish, top with
    cheese and bake for about 45 minutes, it is very delicious and also one of
    those dishes that get better after being in the fridge and eaten for lunch
    the next day. I usually make a huge batch of it and eat it for a few days
    more. It's an easy take to work for lunch left over.
