  1. 1.Start heating the fry pan.
    2.A cup or two of frozen hashbrowns spread on a plate into the microwave to thaw for 2
    minutes on high.
    3.Chop some fresh onion, and left over meats, or cooked sausage, or bologna
    4. Oil or butter in the hot pan
    5. Onions in till partly translucent. Any peppers chop them in
    6. Add garlic or garlic pwder, or chopped .
    7. Add thawed hashbrowns and keep stirring.
    8. Put 3 cups of water in microwave for three minutes on high.
    9.8 Add seasonings. My favorite is a big pinch of thyme, a tablespoon of sweet basil flakes.
    ground black pepper. Also have used cheddar and pepper. My wife likes barbecue sauce. Mushrooms.
    Bacon bits.
    10. Brown potatoes and transfer to waiting soup bowls, preheated if practical.
    11. Pour heated water into empty but still hot pan.
    12. Add tablespoon or less white vinegar to water.
    13. As water comes to boil, crack eggs in to pan and cover with lid.
    14. Poach eggs to preference.
    15. Use slotted spoon to remove poached egg on to hashbrowns in bowl.

    Nummy!

    Takes longer to write this out than it does to prepare it!
