are you guys running off road?
Depends on your weight, style and personal preference. It should be
squishy to absorb stuff, and provide some 'spring' when jumping, But
if it folds sideways when making a sharpish turn it's too low. Also if
you drop and the rim hits the ground (through the tyre).

Yes you lower it. Again, preference and style dependent. You lower it
more if for hopping you rely on seat-in. Try lowering 4 inches as a
starting value. If you're not used to riding that low, go in steps.
For climbing, however, a low seat is disadvantageous. Some (but not
many) people use a quick release seat clamp and increase seat height
just before a long climb.
