Muffins Ready Muffins
Granny's Everyday Muffins
1 egg 1 cup milk 2 tbsp. sugar 2 cup plain flour
3/4 tsp. salt 3 1/2 tsp. baking powder 2 tbsp. butter
Beat eggs, milk and sugar until smooth. Add all other
ingredients slowly while mixing well after each ingredient.
Pour into muffin pan that has been well buttered. Each
muffin pan cup should be 1/2 full. Bake at 350 degrees for
20 minutes or until light brown.
Applesauce Muffins
1 cup flour
4/2 cup sugar
5/2 tsp. soda 4 1/2 tsp. baking powder 1 egg, beaten
6/3 cup milk
7/4 tsp. allspice
8/4 tsp. cloves
9/4 tsp. cinnamon
10/3 cup shortening
11/3 cup applesauce 1 1/3 cup quick oatmeal
Preheat oven to 400 degrees. Mix all dry ingredients,
cut in shortening. Add milk and applesauce. Bake for 20
to 25 minutes.
Mom's Corn Muffins
1 1/2 cup self-rising meal 1 cup all-purpose flour
12/4 cup sugar
13/3 cup melted margarine 1 egg 1 1/2 cup buttermilk
Pinch of soda
Mix all ingredients together. Pour into muffin tins. Bake at
400 degrees for 30 minutes or until done.
Ready Muffins
15 oz. box Nutri Grain (with raisins) cereal 5 cup flour 3
cup sugar 1 tbsp. plus 2 tsp. soda 2 tsp. salt 4 eggs,
beaten 1 qt. buttermilk 1 cup oil
Mix first 5 ingredients until cereal is coated with dry
ingredients in large bowl. Make a hole in middle and pour
oil, beaten eggs and buttermilk. Stir until dry ingredients
are moistened. Store in refrigerator and bake as needed in
450 degree oven. These will keep 6 weeks. You can use Raisin
Bran cereal also.
