I have a fairly good MTB (aluminium frame decent(ish) groupset etc etc, but I want to use it for road riding.
The headstem is NOT an Aheadstem but I have heard that you can buy a quill adaptor that an Aheadset can be bolted onto.
To convert to road, what factors would I need to consider? Obviously the wheels are smaller and there aint owt that can be done about that. Would I need to put road STI levers on or would I still be able to use my V brake levers and rapid fire shifter setup?

It can be done,but if you have to ask you probably shouldn't. Buy a bottom end road bike or something used and you will be money and frustration aheah.
Personally, this doesn't sound like a good idea to me. With the amount of changes you'd have to do to truly make it a road bike, you wouldn't be saving any money. Plus, from that point forward you wouldn't have a mountain bike any more.
The only argument I could imagine for having a person want to do this is to try to save money. If saving money is what you're after, I would either suggest buying a lower end road bike, hence giving you the option for both kinds of riding (at no more cost then converting your mountain bike to a road bike) OR put on a pair of slick tires and call it a day.
