My mom (and a couple others with her) is driving out here to the east coast
of Canada for a visit, and she will celebrate her brithday with us here
later today. She said she wanted seafood, so I went to work.
So far...
I made coleslaw this morning using green cabage, a little red cabage for
colour and carrots. I added the salt and vinager already just to let it set
and I'll add the mayo a little bit before serving incase I need to drain off
excess liquid.
I'll be making clam chowder to start dinner off, using fresh clams, some
bacon too, and some parsely for garnish.
I picked up some nice atlantic salmon which I felleted, I'll give it a light
dredge in flour and fry it in butter and toss on some capers. I also
picked up some huge fresh scallops which I'll pan sear, to perfection I
hope.
On top of that I made a bunch of vegie skewers with mushrooms, onions, red
peppers, yellow peppers, and brocolli. I plan on roasting salt crusted mini
red potatos with a few chucks of elephant garlic wedges mixed in.
I grabbed a couple bottles of riesling to go with dinner, and some grolsch
and keiths for the beer drinkers.
