    65 Soft Molasses Cookies

    Amount Measure Ingredient -- Preparation Method

    1 cup molasses
    1 cup sugar
    2 eggs -- beaten
    1/2 teaspoon salt
    1 cup shortening -- melted
    1 1/2 cups raisins
    1 cup sour ceam
    4 cups pastry flour
    1 teaspoon ginger
    1 teaspoon cinnamon
    1 teaspoon baking soda
    1 tablespoon baking powder
    1 tablespoon cold water

    Mix together molasses, sugar and shortening.
    Add spices, salt then baking soda dissolved in one tablespoon cold water.
    Add eggs, then raisins then sour milk. Last stir in the flour sifted along
    with baking powder. Drop.
    Bake 10-15 minutes. Cookies baked in a moderate oven 350 degrees.
    About 2" space should be allowed on each pan for cookies to spread. Let
    cookies stand in pan a minute before removing on board to cool.
    Do not pile or put in jars until quite cold.

    3/4 cup sugar
    1/2 cup butter or margarine -- softened
    1/2 cup molasses
    1 egg
    2 cups flour
    1 1/2 teaspoons baking soda
    1/2 teaspoon cinnamon
    1/4 teaspoon cloves
    1/4 teaspoon nutmeg
    1/4 teaspoon ginger

    In large bowl, combine sugar and butter. Beat until light and fluffy. Add
    molasses and egg. Blend well. Add all remaining ingredients. Mix well.
    Cover with plastic wrap. Refrigerate 30 minutes for easier handling.
    On waxed paper, shape dough into roll 9" long. Wrap roll in waxed paper or
    plastic wrap. Refrigerate 6 hours or until firm.
    Heat oven to 375 degrees.
    Cut dough into 1/2" slices. Cut each slice into quarters.
    Place slices 2" apart onto ungreased cookie sheets.
    Bake for 6-10 minutes or until set. Immediately remove from cookie sheets.

    4 cups sugar
    1 cup molasses
    4 eggs
    8 cups all-purpose flour
    2 tablespoons baking soda
    2 teaspoons baking soda
    2 teaspoons ground cinnamon
    1 teaspoon salt
    1 teaspoon ground cloves
    1 teaspoon ground ginger
    Additional sugar

    In a large mixing bowl, cream shortening and sugar. Add molasses and eggs.
    Mix well. Combine flour, baking soda, cinnamon, salt, cloves and ginger.
    Gradually add to creamed mixture. Cover and refrigerate for 1-2 hours.
    Shape 1/4 cupfuls of dough into balls. Shape 1/4 cupfuls of dough into
    balls. Roll in sugar. Place 4 cookies on a greased baking sheet at a time.
    Bake at 350 degrees for 18-20 minutes or until edges are set. Remove to

    racks to cool.

    3/4 cup margarine
    1 cup firmly packed brown sugar
    2 eggs
    1/4 cup unsulphured molasses
    1/2 cup wheat germ
    2 cups flour
    1/2 teaspoon salt
    1 teaspoon baking soda
    1/2 teaspoon ground cloves
    1 teaspoon ground cinnamon
    1 teaspoon ground ginger
    1 cup whole wheat flour
    sugar
    blanched almonds

    Stir together margarine and brown sugar. Add the eggs and stir well.
    Mix in the molasses and wheat germ.
    Sift in flour, salt, baking soda and spices, stirring until blended; add
    whole wheat flour. Chill for at least 30 minutes.
    Form into balls the size of a walnut. Dip in sugar. Top each with an
    almond.
    Put on greased cookie sheets.
    Bake at 375 degrees for 12-15 minutes.

    1/4 cup unsulphured molasses
    2 cups white chips
    1 cup finely chopped walnuts

    Combine flour, baking soda, ginger, cinnamon, cloves and salt in small
    bowl.
    Beat sugar and butter in large mixer bowl until creamy.
    Beat in egg and molasses. Gradually beat in flour mixture. Stir in chips.
    Refrigerate for 20 minutes or until slightly firm.
    Preheat oven to 375 F.
    Roll dough into 1-inch balls. Roll in walnuts. Place on ungreased baking
    sheets.
    Bake for 9 to 11 minutes or until golden brown. Cool on baking sheets for

    minutes. Remove to wire racks to cool completely.

    vanilla. Add flours, baking soda, salt, mixing well. Stir in oats and
    raisins.
    Combine 1/4 cup sugar and cinnamon. Stir well.
    Shape dough in 1-inch balls, roll in cinnamon/sugar mixture.
    Place 2 inches apart on cookie sheets.
    Bake at 375 degree (F) oven for 7-9 minutes until light brown.

    1 cup Grandma's Unsulphured Molasses
    1 egg
    3 cups sifted all-purpose flour
    1 teaspoon baking powder
    1 cup raisins
    1 cup nuts -- chopped

    Cream butter and blend in molasses. Beat in egg. Sift in flour and baking
    powder. Blend well. Add raisins. Shape dough into 2 rolls about 12 inches
    long. Roll in chopped nuts and wrap in foil or waxed paper. Refrigerate
    for
    12 hours or overnight. Or freeze for 3 hours.
    Cut in 1/4-inch slices. Place on greased baking sheet.
    Bake in 350 degree oven for 12 minutes.

    1 cup sugar (plus extra for rolling)
    1/4 cup molasses
    1 egg
    2 cups flour

    1/4 teaspoon mace -- optional

    Preheat oven to 375 and grease cookie sheets.

    Add dry ingredients and mix well.
    Roll dough into 1-inch balls and roll in sugar. Once they are on the

    sheet, make an imprint in each cookie with your thumb and add a bit more

    Combine brown sugar, butter and shortening on medium speed until creamy.

    Reduce speed to low, add flour, baking soda, spices and salt. Beat till

    Cover and refrigerate for 1-2 hours or until firm.
    Heat oven to 375F.
    Shape dough into 1 1/2" balls. Roll balls in sugar. Place 2" apart on
    ungreased cookie sheets. Flatten balls with glass dipped in sugar.
    Bake for 8-11 minutes or until set.
