    Mocha Chip Cookies

    Mocha Icing

    Make a pot of very strong coffee and let cool. Melt 6
    Tablespoons of butter with 2 squares of Baker's bittersweet
    chocolate . Mix together melted butter/chocolate mixture,
    one box of powdered sugar and 1 teaspoon vanilla. Mix in the
    cooled coffee, a little at a time, alternating with milk
    until icing reaches desired consistency.

    Mocha Brownies

    2/3 cup all-purpose flour
    3/4 tsp. salt
    4/2 cup butter or margarine 2 oz. unsweetened chocolate 1
    Tbsp. coffee powder 1 cup sugar 2 large eggs, well beaten
    5/2 tsp. vanilla
    6/2 cup chopped walnuts

    Preheat oven to 400 degrees. Grease an 8-inch square cake
    pan. Sift together flour and salt. Set aside. Melt butter
    and chocolate together in microwave. Cool slightly. Stir in
    coffee powder, sugar, eggs and vanilla. Gradually add flour
    mixture. Blend well. Stir in nuts and pour into prepared
    pan. Bake for 15 to 18 minutes. Cool completely. Cover with
    Mocha icing below.

    Mocha Icing:

    1 Tbsp. unsalted butter 1 Tbsp. Coffee powder,
    dissolved in 1 Tbsp. hot water 1 Tbsp. unsweetened
    cocoa powder 1 cup sugar
    7/2 tsp. vanilla 1 egg yolk

    Melt butter in small saucepan over low heat. Remove from
    heat. Add coffee. In separate bowl mix together cocoa and
    confectioners sugar. Add butter/coffee mixture and vanilla
    to sugar mixture. Blend well. Stir in egg yolk. Add extra
    water if necessary to improve spreading consistency. Cut
    into 12 bars.

    Brownie Pie

    2 cup chocolate chips 1 1/2 cup chocolate chips 3 Tbsp.
    butter 3 eggs 1 cup sugar 1 Tbsp. instant coffee
    8/2 tsp. vanilla 6 Tbsp. flour
    9/4 tsp. baking powder
    10/4 tsp. salt
    11/4 lb. chopped walnuts

    In a saucepan over medium heat, melt first 2 cups of
    chocolate chips with butter to a fudge-like consistency. In
    a mixing bowl, beat eggs, sugar, coffee, and vanilla until
    fluffy. Fold in flour, baking powder, and salt. Then mix in
    the melted chocolate plus 1 1/2 cups un-melted chocolate
    chips and walnuts. Pour into greased 10-inch pie pan. Bake
    at 350 degrees for 35 to 45 minutes or until toothpick
    inserted comes out clean. Cool before slicing.

    Banana Mocha Muffins

    2 1/2 cup all-purpose flour 1 tsp. baking powder
    12/2 tsp. baking soda
    13/2 tsp. salt 1 Tbsp. Powder ground coffee 1 Tbsp. hot
    water 1 1/3 cup or 3 mashed bananas 1 cup butter or
    margarine 1 1/4 cup sugar 1 egg 1 cup semi-sweet
    chocolate broken into chunks

    Preheat oven to 400 degrees. Spray muffin pan. Mix together
    flour, baking powder, soda and salt in small bowl. Dissolve
    coffee in hot water. Beat mashed bananas, butter, sugar and
    egg in large bowl. Stir in flour mixture until well blended.
    Fold in chocolate chunks. Bake 25 to 30 minutes.

    Mocha Ice Cream Pie

    7 1/2 oz. Oreos 2 oz. butter melted 2 pt. coffee ice cream

    1 oz. unsweetened chocolate 2 oz. semi-sweet chocolate 1
    Tbsp. plus 1/2 tsp. water 2 Tbsp. light corn syrup 1 1/2
    Tbsp. butter cut into bits

    Break cookies into small pieces with food processor or
    blender until fine. Mix with melted butter. Press firmly
    into buttered pie plate. Refrigerate overnight. Spread
    softened ice cream into pie shell. Place in freezer until
    firm. Melt chocolate in saucepan and add water, corn syrup,
    and butter heat until melted and mixture is smooth. Cool 15
    minutes or until room temperature. Pour glaze over pie,
    spreading quickly. Freeze several hours more before serving

    Mud Coffee-Cream Pie

    14/2 pkg. crushed chocolate wafers
    15/2 cup margarine melted 1 qt. coffee ice cream, softened
    16/2 jar or 1 cup hot fudge sauce

    Mix wafers and margarine. Press into pie pan and chill.
    Spread softened ice cream into crumb mixture. Spread fudge
    sauce over ice cream and freeze for at least 10 hours. Serve
    with whipped cream.

    Oreo Mocha Pie

    1 lb. Oreo cookies, crushed 2 sticks butter or margarine
    17/3 cup chocolate chips (semi-sweet) 1 1/2 cup evaporated
    milk 2 cup powdered sugar 1 tsp. vanilla
    18/2 gal. Coffee ice cream nuts

    Melt slowly 1 stick butter and blend in with cookies Press
    into a 9 x 13-inch Pyrex pan. In a saucepan, melt 1 stick
    butter and chocolate chips. Add evaporated milk and powdered
    sugar, stirring constantly. Bring to a boil remove from heat
    and add vanilla. Spread Ice cream on top of the crust; add
    sauce on top of the ice cream, then freeze. Top with crushed
    nuts, if desired

    Mocha Chip Cookies

    19/3 cup butter
    20/3 cup shortening
    21/3 cup sugar
    22/3 cup brown sugar 1 egg
    23/2 tsp. vanilla 1 cup flour
    24/4 cup cocoa 1 Tbsp. powder coffee
    25/2 tsp. salt
    26/2 tsp. baking soda 1 cup chocolate chips 1 cup
    chopped walnuts

    Preheat oven to 350 degrees. Cream first 4 ingredients. Add
    egg and vanilla. In separate bowl, combine dry ingredients;
    add to creamed ones. Fold in chips and nuts. Bake approx 15
    min or until golden brown.
