  1. Missouri Cole Slaw

    1 medium head Cabbage, core, shredded, 8 cups 2-1/2 tsp.
    Salt
    1/2 cup Sour Cream
    2/4 cup Sugar 3 Tbsp. Vinegar
    3/3 cup finely chopped Onion 2 medium Carrots, shredded
    Evaporated Milk

    In a large bowl, combine shredded cabbage and 2 tsp. salt.
    Place plate over surface of cabbage and weigh down with
    some canned goods. Let stand 60 minutes. Stir together Sour
    Cream, sugar, vinegar, remaining 1/2 tsp. salt and enough
    evaporated milk to make a medium thick sauce. You don't
    want it to thick or thin. Squeeze cabbage by handfuls to
    remove excess liquid. Add cabbage to prepared onion and
    carrot. Stir sour cream dressing into cabbage mixture. Toss
    lightly to coat.
