Microwave Divinity Carol Pendergraft
2 1/2 cups sugar
1/2 cup water
2/2 cup light corn syrup dash salt
In a 3 quart Pyrex bowl, combine sugar, water, corn syrup, and salt. Cover tightly and microwave on
high for 5 minutes. Remove and stir thoroughly. Microwave, uncovered on high for 9-12 minutes or
until candy reaches hard ball stage (260 F). Stir and turn bowl every 2-3 minutes. Towards end of
cooking time, check and stir every 30 seconds. Meanwhile, beat 2 egg whites until stiff peaks form.
Slowly pour cooked syrup over egg whites, beating constantly. Add 1 tsp. vanilla or flavoring of
your choice. Continue beating until candy begins to lose its shiny look and is quite thick. You will
need a powerful mixer! Stir in 3/4 cup nuts, candied fruit, coconut, etc. Drop by tsp. on wax paper.
