I ran across 'mesquite pod meal' while doing a google search for something else. It's supposed to taste like molasses with a hint of caramel and is 3g net carbs/15g with a glycemic index of 25. I've been looking for something to replace brown sugar and especially molasses for my baking and wondered if anyone has used this?
I found websites stating that 15g mesquite pod meal is 2 tablespoons. I thought it would only be 1 tablespoon, so it would be great if it could be used as a sub for molasses or brown sugar. Again, does anyone have any experience with this?

I use sweet & low brown sugar, but sparingly, so I don't get the aftertaste, so I don't know how that will fit into your recipe.

Yeah, that's the website I got some of my info from too. I make my own sugar substitute blend for baking using polydextrose, isomalt, erythritol and Sweetzfree. It gives the same texture and "mouth feel" as real sugar. I add a half tablespoon of blackstrap molasses for "brown sugar". Sweet & Low or any of those artificial sweeteners can't replace those. What I'd really like is something to replace straight molasses when there's a larger amount required, like in bran muffins.
