I start with some gluten free oats that I have whirred up in the food
processor. I also take a handful of flax seeds and whiz them up in my Magic
Bullet. We have an allergy to dairy eggs so I need something as a binger.
I then and chop up (in the food processor) some onion (a lot of onion),
celery, carrot, and a handful or two of spinach, depending on how much I am
making. I take all of that and mix it with the oatmeal and flax, allowing
it to soak for a few minutes to soften. I then add a jar of chili sauce or
some ketchup, and some tomato juice. I might vary the vegetables depending
on what I have in the house. Swiss Chard is good in this too. Because of
the dairy allergy, I try to get in as many greens as I can!
I then mix in 2-3 pounds of lean ground beef. I like to make a lot at a
time. I don't have an actual recipe. I just do it until it looks right. I
use salt, pepper and Italian seasoning. If I need to test the flavor, I
take a small bit of it and fry it in a skillet.
I make individual meat loaves, topping each one with some more ketchup or
chili sauce.
