Master Mix
This mix can be used in biscuits, breads, muffins,
tortillas, pizza, quiche and so on.
8 cups unsifted enriched flour
1/4 cup baking powder 3 Tbsp sugar 1 Tbsp iodized salt 1 1/3
cup non fat dry milk powder
2/3 cup canola oil
In a large bowl, combine all ingredients except canola oil.
Drizzle oil over dry mixture, and cut in with pastry
blender or fingers until it resembles coarse cornmeal.
Variation: Use 4 cups white flour and 4 cups unsifted whole
wheat flour. Keep refrigerated. Makes about 10 cups. Keeps
about 3 months in refrigerator. To measure Master Mix for
recipes, stir lightly, pile into cup (do not shake) and
level off.
Master Mix Recipes:
Biscuits
2 cup Master Mix
3/3 to 1/2 cup water
Measure Master Mix into bowl, ad 1/2 cup wter and stir.
Add a little more if needed to for a soft dough. Knead
gently about 12 times in the bowl or on a surface
sprinkled with Master Mix. Roll or cut into squares or
triangles with a knife. Bake at 450_ for 12 - 15 minutes.
Makes 10 - 12 biscuits.
Muffins
3 cup + 2 Tbsp Master MIx 3 Tbsp sugar 1 egg, beaten 1 cup
water
Combine Master Mix and sugar. Blend egg and water and add
to mix. Stir gently just until dry ingredients are
moistened. Mixture should be lumpy. Bake at 425_ for 20
minutes. Makes 1 dozen
Pancakes
2 cup Master MIx 1 1/4 cup water or milk 1 egg, beaten
Combine all ingredients, stirring just enough to moisten
dry ingredients. Drop by spoonfuls onto griddle. Turn when
bubbles appear on the surface. Cook until browned. Makes 12
- 16 pancakes.
