Marinara Sauce
4 Tbsp extra virgin olive oil
1- 28 oz. can whole tomatoes (undrained and chopped)
1- 28 oz.can diced tomatoes (undrained)
12 oz. tomato paste, Contadina
48 oz. water
4 cloves garlic (minced or crushed)
1 large green bell pepper (seeded and diced)
1 cup mushrooms (sliced)
1/4 cup fresh basil (chopped)
1/4 cup fresh parsley (chopped)
1 Tbsp dry oregano
1 tsp. sugar
2 tsp. course salt
2 tsp. white pepper
Heat oil in a medium size soup pot over medium heat. Add garlic; saute 2
minutes, stirring frequently. Add bell pepper, fresh basil, fresh parsley,
mushrooms and saute another minute. Add the can of chopped whole tomatoes,
can of diced tomatoes, tomato paste, dry oregano, 2 tsp.course salt and
white pepper. Stir to mix thoroughly. Cook for another 3 minutes. Add the
water and bring to a boil stiring occasionally. Reduce heat and allow to
slow cook for 2 hours. Add water as needed. Serve over pasta topped with
grated parmesan cheese. Serves : 6
NOTES : Tomatoes will scorch easily. Always cook on low setting.
General rule: Use 2 cans of water to each can of tomato paste.
Adding more parsley, garlic and basil does not hurt this sauce.
