Mar's Scotch Shortbread Cookies
1 pound (real) butter
1 cup packed brown sugar
1 teaspoon vanilla
5 cups flour
Cream butter and brown sugar together with wooden spoon until all of the
lumps are out. Add flour until the dough is moldable like stiff mashed
potatoes. Mix the rest of the way with your hands. Work in vanilla until
blended. Divide dough into three equal parts. Form three log shaped
rolls out of each ball of dough. Place on cookie sheet or jellyroll pan,
whatever will fit into the refrigerator. Refrigerate until firm. Remove
from refrigerator and slice into 1 quarter inch slices. preheat oven to
325 degrees. place cookies on large cookie sheet about a half inch apart.
They do not rise or spread. Bake for 25 to 30 minutes or until golden
brown. I've done them so many times that I can tell when they're done by
their smell. Folks will fight over them! Variations: You can dip the
cookies in cinnamon and sugar just before baking. you can also frost them
with a powdered sugar icing when they are removed from the oven. Just a
packaged vanilla frosting will work Great!
