  1. Low Fat Potato Pancakes

    6 medium potatoes, peeled, in chunks
    2 eggs
    one medium onion, quartered
    1/3 cup flour, loosely packed
    1 tsp baking powder
    1 1/4 tsp salt
    1/4 tsp sugar
    pepper to taste

    Dry potatoes on paper towels. Blend eggs, potato chunks and onion quarters
    in food processor or blender until smooth. Do not over-process. Pour
    potato mixture into a bowl and add the flour, baking powder, salt, sugar
    and pepper Mix thoroughly. Cook in batches in a non-stick frying pan
    coated with a small amount of butter flavor non-stick spray. If you don't
    mind a few extra calories and fat grams you could always use butter
    instead of non-stick spray. Serve with applesauce or low-fat plain yogurt
