There aren't all that many varieties of root veggie available in
stores.
If you're going to eat lots of root veggies because that's where your
low carb process led you, you'll want more than one variety.
Parsnips are lower in carbs and glycemic load than carrots, and
plenty of people think they go well in stews. They also do well
when fried in chips, shredded, you name it.

All humans nstinctively like most types of veggies but it is
common to dislike a few specific types. You and I happen to
dislike parsnips. Shrug. plenty of people love them. More for
them, eh? Just because two people happen to dislike a
veggie doesn't mean everyone does. Think of brussels
sprouts and how many dislike those delicious things. I also
dislike bell peppers and think of how many like them. At
least there are a hundred other types of peppers I do like.

different types of roots to chosen among. Turnip, rutabagas,
parsnip, carrot, beet, celery, you name it. They range from
